Why we chose this cask
Almost all of Strathmill's spirit goes into blends, so a single cask is a rare chance to taste it on its own. Sixteen years in one ex-bourbon hogshead gave this cask bright lemon and orchard fruit over buttery pastry, with a savoury, almost olive-oil edge that sets it apart.
One cask, 233 bottles.
Who it is for
For the drinker who reaches for lemon tart over chocolate cake.
Bright, buttery and fresh at cask strength, with enough cocoa and oak on the finish to keep it interesting.
Flavour profile
Tasting notes
Yellow gold, bright and clear.
Bright and lightly sweet from the outset, with lemon meringue and green apple on the opening. Vanilla and buttery pastry bring a gentle creaminess, while a savoury olive-oil note gives it an unusual edge. A thread of cut grass and soft malt keeps the nose lifted, and with time the citrus turns to zesty lemon peel, with a hint of ripe pear.
A rounded, buttery arrival carries lemon tart and honeyed malt across the palate. Orchard fruit develops through the middle, with green apple and pear joined by soft vanilla. The texture is lightly oily rather than heavy, and the savoury note works well against the sweetness. A pinch of cocoa, grapefruit pith and gentle peppery warmth bring definition, before quiet oak begins to dry the edges.
