A boxed bottle of One Cask at a Time beside a glass on a polished table
Our story

Some casks deserve to stand alone

We started One Cask at a Time to find them, bottle them once, and pass them on.

A cask captures more than whisky. It captures time, place and the character of the spirit within it. We exist to find the casks that tell those stories best, bottle them exactly as they are, and pass them on, one cask at a time.

Small team, big vision

A small company, on purpose. Every cask is carefully selected before bottling.

How a cask is chosen

  1. We taste every cask Before a cask earns its place in One Cask at a Time, we taste it. No decisions made from spreadsheets or specifications. Just the whisky in the glass.
  2. Process of elimination Most casks are good, although only a minority are good enough to bear our name.
  3. Wait, sometimes years A chosen cask is bottled when it is ready, not when the calendar says so.
  4. Bottle it, single cask, every time One bottling, one cask, never repeated.
“Only the exceptional bears the name One Cask at a Time.”

A moment in time

Anno 1494

“The most important ingredient of Scotch is time, without the hands of time there simply would be no Scotch.”

The first written record of Scotch whisky dates to 1494, when eight bolls of malt were recorded for Friar John Cor to make aqua vitae. The same year, in Milan, Leonardo da Vinci was sketching the first pendulum. From there, whisky and time have gone hand in hand.

More than five centuries later, the principle remains unchanged. Whisky takes time. Every cask we select has already spent years maturing in wood before it ever reaches our glass. Our role is to taste it, understand it, and recognise when the time is right.

Won by the cask, not the brand

Every medal here belongs to a single bottling. You will only ever see it on that bottle.

The record stays up

Every cask’s page, its distillery, cask number, outturn and tasting notes, stays published after the last bottle sells.

Awards and press 7 medals across 5 casks, each on the bottle that won it, and every piece written about us. See awards and press

The next cask will be small too

Subscribers hear about each one before it reaches the shop.

First sight of new casks and the occasional tasting note. No noise, and you can leave whenever you like.
